Parma or Bologna for food tours?

the dilema answered! PARMA ... why? Because Bologna has smog and too many people! Seriously though Parma is really a quaint sophisticated food capital city with the worlds best foods. Anyone offer some more detail to sway me into returning this fall for the Parma Ham festival.
